    When I realized how good they are with salsa, I was tempted to melt cheese over them and call them nachos.

    I love them, always have but forgot that I can have them while in NK. Must remember these next time I go to the store. How did they work out with cheese over them?

    I didn't actually melt cheese over them. Someday I probably will.

    I made palm oil may and I dip the chips in that

    I've been having some dairy. Cream in my coffee and a little cheese here and there. Should I cut dairy out? It concerns me because I can't have coconut product (except for CO). I guess I could put CO in my coffee instead of heavy cream.

    I wish I owned a scale so I could see what my weight is doing.

    I would cut dairy out. I think it is highly problematic for many of us, maybe most of us. Except butter seems okay, as it lacks enough proteins. Butter in coffee is pretty darned tasty.

    Hmmmm.....maybe I could have a butter and CO coffee in the morning instead of using the heavy cream. That doesn't leave me an option though of something delicious to put over berries.

    I had some more bone broth with bone marrow, and a piece of chicken, a few pork rinds with homemade palm oil mayo. I'm feeling pretty full.

    Here is an interesting article about histamines in food that we should be aware of:

    Histamine Intolerance, GAPS and Low Carb - Primal Docs

    Foods like bone broths, bacon, black coffee and leftovers have high amounts of histamines that may present challenges for us especially in the early days of a ketogenic diet. I'm not going to worry about this right now, but I think it is an interesting thing for you if you have weird symptoms like rashes or sleep issues.

    Marissa don't worry about the scale. Use a string, run it around your waist and cut it. . Every once in a while take that string and wrap it around your waste to see if you've made progress or keep cutting a new string every week and compare against the previous week. You could also measure the difference if you want to know in inches how much you've lost.
