I'm sure there are many other recipes out there, but this is my super-easy go-to, and it's delicious on lettuce with any protein alongside it.
2 T olive oil (extra virgin, if you can)
2 T red wine vinegar
1 T balsamic vinegar
1 T Dijon mustard
2 scant T of warm water
pinch of garlic powder and italian herbs
another squirt of mustard, because I love it so
I put it all in a mason jar and shake like crazy. You can adjust the ratios of you prefer a 'richer' dressing or don't love vinegar as much as I do. This makes enough to last a week. Or a giant tub of organic mixed greens, depending on how you look at it.
my latest go-to dressing has been olive oil, apple cider vinegar, horseradish mustard, salt, pepper, crushed red pepper, garlic powder, and a tin of wild planet sardines all mashed up. whisk. toss in the veggies. enjoy
