I had the same sort of issue. Judging by your sample breakfast, you need more food...specifically I think adding more fat will be better. I typically eat 4 eggs along with meat and veggies (sometimes veggies). I'm a public school teacher, so I understand the stresses during the school day. I actually do 16oz of Bulletproof Coffee in the morning, and if I get hungry around 2:30 or 3, I snack on some almonds or hard boiled eggs. My bulletproof coffee recipe is 2TBSP of grass-fed kerry gold butter and 3TBSP of MCT oil with 16oz of coffee, it's around 600cal, and all fat.
To sum up my ramblings. I suggest you: Eat more. And eat more fat.
