Olive oil is fine. Most of us use it. Coconut oil is miraculous. Start here.

    read the posts suggested

but when you live low carb - high fat, coconut oil is like pure energy! the short chain triglycerides get consumed preferentially and provide a big enegy burst

    tastes great too

Coconut oil has medium chain triglycerides which can readily cross the blood brain barrier. So basically, it is direct food for your brain (theres a little more complexity to it, but thats really what it comes down to). Also it tastes amazing!

And lard is really great also, deffinitely cheaper but it doesn't have any of the medium chain triglycerides.

    Hope that helped!

If you do decide to try lard, make sure you find unhydrogenated lard. That which is sold in the supermarket is hydrogenated, chock full of trans-fats.

Good catch, forgot to mention that part. Trying to find unhydrogenated lard can be frustrating too

Besides the amazing health benefits of coconut oil, the flavor sure beats out olive oil when frying an egg!

if you bake bacon on a rack in the oven, you can collect about 1/2 cup or more of fat from the drippings of a typical 12 oz package, and use that for cooking savory things.
