    Maple Bacon Sweet Potato Muffins

    These were amazing. A great primal treat to impress non-primal friends with. I'm going to make them for the family on Easter morning!


    1 medium sweet potato, mashed without skins
    2 eggs
    1 tablespoon maple syrup
    1/2 tea baking powder
    1 tbsp melted fat (the bacon grease)
    1/2 cup almond flour
    cinnamon and salt

    Mix it all together with 4 chopped and cooked slices of bacon. Makes six muffins.

    20-25min at 350 degrees didn't end up being long and/or hot enough
    First batch I did at like 30 at 350
    Second I did for 25 at 400

    I think the second batch I did a TAD more almond flour because the potato was bigger. Really just eyeballed it.

    Thanks for the great recipe! I'm looking forward to trying it for an upcoming potluck luncheon. What did your non-primal family think of it?

    They LOVED them. And so did my 2.5 year old niece. I made 2 without bacon for her because I wasn't sure she'd dig the texture of the bacon pieces. But she begged for one later in the day and loved it with the bacon as well.
