I never thought to put chicken livers with cabbage, but it sounds really good. I think the slightly sweet taste that cabbage gets when you braise or grill it would play off the earthiness of the liver.

Who says back fat is a bad thing? Maybe on a hairy guy at the beach, but not on a crab.

This looks fantastic! I've only eaten beef liver and don't care for it unless it's hidden in something, but I think this is worth trying chicken livers for. Where do you source yours from? U.S. Wellness?

Did you read the link? You start off by sauteing them dry. Patted dry, with no fat.

During pregnancy my wife LOVED fried chicken livers. She much prefers them to any mammal liver. will have to get some and fry some up!
