Your muscle rebuilds during rest periods. This is just as important as the workout that you do. You will get burned out doing strength workouts every day.
Soreness (or lack thereof) the day after doesn't actually tell you anything. You might be able to figure out a little bit of information regarding how much those muscles are used to working, and/or your recovery ability, but nothing about the quality of the workout or your program. It doesn't matter. Forget about it.
