I miss cheese a bit and was thinking about giving nutritional yeast (aka nooch) a try, as I've heard it makes a reasonable substitute taste-wise. I was shocked to see its stats -- it's packed with protein, 8 grams per 2 tablespoons, which is more than an egg.
I'm curious, though, about the bioavailability of this protein. Animal sources are the most bioavailable whereas plant sources tend to be far less bioavailable... but nutritional yeast is a fungus, which is in a category all its own. Anybody have any idea?

No I'm not lactose intolerant... I just avoid dairy (along with most fruit and nuts... sigh) because I hear so much about how they impact body composition (people insist they gain on dairy regardless of calories, which I find hard to believe, but I'm avoiding it for now just in case)
I don't know about the bioavailability of nooch's protein, but I love the stuff! Salt is a must with it. Great source of b vitamis, too. Will make our urine bright yellow.![]()

Primalstudent, are you just deathly afraid of gaining a bit of fat or what? You are the definition of lean and i think you are doing yourself a great disservice by avoiding nutrient dense foods like dairy and fruit.
What about goat cheese or just limiting portions? Cheese is too awesome to give up imo, but a little goes a long way.
Ok, so I have some nutritional yeast on hand. What can I do with it? I used to feed it to my mealworms, but now that I've shut down the "farm" I have leftover yeast to use up. I hate to toss it out. (Tho I am tossing the wheat germ. Blech!)

I like to mix it with butter and salt and white rice. Also tasty on popcorn. You can make a cheesy sauce with coconut oil/ butter, salt, etc. and pour it on veggies/meat/ potatoes. It's also good sprinkled on a salad. Can make a nut/seed/nooch mixture, coat kale leaves and make chips, which are sooo good. Google nutritional yeast kale chips.
