The idea is that IBS-C, and constipation in general is caused by endotoxin build-up cutting off circulation to the intestines. By this, the carrot salad acts as a sweep. Coconut oil, and vinegar with some honey are carried by the carrot fiber, which suppresses endotoxin growth and stimulates healing of the wall of the intestine; therefore promoting regularity(increase circulation), and the increased weight of the stool heals stress and gets rid of more toxins.

So it's good to have it between meals. Cascara functions the same, as do bamboo shoots. Oddly, a lot of problems are fixed with just adding more fluids too.
