I had pig spleen a little while ago. Tastes normal, actually. Like a mild liver. Nice photo and food presentation.
Steak, eggs, potatoes - fruits, nuts, berries and forage. Coconut milk and potent herbs and spices. Tea instead of coffee now and teeny amounts of kelp daily. Let's see how this does! Not really had dairy much, and gut seems better for it.

Have some Hawaiian smoked bacon that finished curing and will be ready to try this weekend. Also some Kalua brined beef jerky drying and may do something with pork tongue in the coming days, perhaps some balut as well
That looks wonderful. Mentally, I've been a bit reluctant to try spleen (though I'm perfectly fine with heart, liver, and tongue), but that looks so good, I want to stick a fork through the monitor to try it.
