Assuming it's grass fed, both of those are great ideas. You could also saute veggies with it and remove any chunks that remain (or eat them if you like them).
I've gotten to the point where I don't throw the fat away from anything grass fed. I've got a container in the freezer where I'm collecting fat until I have enough to render.
