I'm Puerto Rican and we eat chicken gizzards with green bananas that's super good and by fluke is completely primal! Here's a recipe: Escabeche de guineos y mollejas Recipe edit: idk why this recipe calls for black olives, traditionally it's made with green Spanish olives, the rest is right though.
I've also made the chicken liver pate from MDA and I can attest that it's good.
