other wards known as "Rubbish" to those of you not from the UK...

Ive made mayo in the past & never had an issue, however the last couple times ive made it its had a very bitter aftertaste. Im not having any problem creating "mayo" consistancy so im sure im making it properly.
eggs are fresh & free range,
Im thinking its the EVO oil, bu im sure thats what I had used before without the bitterness....

How did you make it? I've heard making it in a food processor can cause overheating and a bitter taste. But I always make it in a blender.

It's also the case that different olive oils have different flavors. Is it a newer bottle of the same brand, or has it been sitting around for a while?

you need to use non virgin olive oil when making mayo. The EVOO can overpower everything and has an aftertaste. Also make sure it hasn't gone rancid.

It is the EVOO.

There is some sort of explanation here: The Food Lab: Homemade Mayo In 2 Minutes Or Less (Video) | Serious Eats something about overly-vigorous blending of the mayo-making process releasing bitter plant compounds that you normally can't taste because they are bound/protected in the native state of the oil.

Use a more refined version of olive oil, or use another type of oil, like Avocado:

I've used beef and bacon fat to make mayo but it is very very rich tasting so not suitable for all purposes.

I use the blender to make it.. looks like it is the oil.. bummer cause its good oil to.. although that probably explains why Olive oil mayo in the store is usally only 3-6% & the rest rapeseed ...

I find extra virgin olive oil makes a bitter mayo. I've been able to buy some high oleic sunflower oil from our local health food shop which makes good mayo mixed with mild olive oil. I often add a bit of flax oil too...

I find avocado oil works well and has a very smooth taste. Can you get that where you are?

EVO mayo is way too overpowering. i use the light OO. i have used light OO cut with deodoursied coconut oil one time when i was low on OO which came out pretty good. i had to melt the CO and the may set like a mousse. i have also cut light OO with EVO to make mayo but it is still quite strong tasting. poss would be ok if you like that EVO taste.

I picked up some organic sunflower oil yesterday to try out.. and duck eggs... hmmmm duck egg mayo sounds nice....

Oh please do report on how the duck egg mayo turns out. It makes a nice, firm custard and I wondered if it might make a thicker mayo. Alas, they haven't had duck eggs at the market since.
