This has happened. Last night the 99% started tasting sweet to me, I even checked the package to make sure I didn't buy the wrong thing. 2 grams of sugar in the whole bar.

I just posted a thread about a raw cacao bar review blog post with a link.

I'll be doing more on cacao because it is one of my passionate foods at the moment.

    Hi guys!
Just a quick question about chocolate.
How dark does it have to be to be considered primal? I've just purchased an 85% Lindt bar, and I thought that was really good. But I've noticed that a lot of you are eating 90-99% chocolate.
    Is my percentage too low?

Dunno if anyone mentioned it yet, buuuut... TAZA! Stone ground and delicious.

re: Traveller-- eat what makes you feel your absolute best and tell the rest of the world to STFU.

If 85% is what makes you happy and feel like a million bucks, go for it. If Scharffen Berger's 99% makes you feel like a superhero, eat that.

I've been making my own chocolate lately with cocoa powder.

Melt large blob of coconut oil in a glass measuring cup until all the way liquid
(note: if making this in southern California in summertime, you can skip step one.)

mix in as much cocoa as you can while keeping it liquid (not gloppy)

if it gets too thick add a bit of coconut cream

season as you like with mint, cinnamon, nutmeg, or go savory with a little salt and cayenne

you can use some stevia if you like it but I don't bother. The coconut adds enough sweetness for me.

pour into the bottom of non stick muffin pans and pop in freezer

they come out like little hockey pucks. Tasty hockey pucks.

I agrees with you there, that one PB has posted sounds great and I'm a bit of a freak, as I don't really like chocolate!

    Cheers
