Primal coffee cake
This recipe started out as the "no-oat oatmeal" that was posted a while back. After a dozen or so evolutions I came up with this coffee cake. It's a pretty big batch because I make it and keep it in the refrigerator for on the go breakfast.
3 cups almond meal
2 cups chopped nuts of your choice ( I like pecans/cashews)
1.5 cups shredded coconut
1/2 tablespoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1 teaspoon nutmeg
MIX DRY INGREDIENTS TOGETHER
1/2 cup butter- melted (substitute coconut oil for full primal)
2 cups milk or almond milk
1 teaspoon vanilla
MIX INTO DRY UNTIL BLENDED
POOR BATTER INTO 9X13 BAKING PAN
BAKE AT 325 FOR 35-40 MINUTES UNTIL FIRM
Erm...is this to have with coffee rather than actual coffee cake. There's no coffee in ur ingredient list.
Yeah coffee cake can go either way...it's either a cake made with coffee or a cake eaten with coffee.
Instead of milk you could sub for some coffee I think
"Coffeecake" is eaten with coffee. "Coffee cake" might be coffee-flavored.
