Greek Yogurt Lemon Mousse
If you eat dairy, you should try this. I wanted a tasty way to eat more gelatin, and satisfy my sugar free sweet tooth.
It's delicious and easy.
My inspiration came from this recipe, which I made with stevia:

Yummy and uses egg whites, but it took a lot of time and every bowl I own. This tastes really similar, just thicker.
1 cup Greek Yogurt
1 packet Knox gelatin
2-3 tablespoons lemon juice
Stevia (or your favorite sweetener), to taste (I think I used 2 tablespoons)
To serve- Blueberries or Raspberries
Sprinkle gelatin over yogurt, stevia and lemon juice while you boil 1 cup of water. Pour boiling water over yogurt and mix well. It will look runny and weird, but that is ok. Refrigerate about 2 hours. Add blueberries on top and eat.

Do you think xanthan gum would work in place of the gelatin?
