Electrolyte imbalance probably.
I woke up this morning and couldn't quite quench my thirst, but as the day has progressed I have gotten thirstier and thirstier. Has anyone else had this issue?
PB for 15 days
Today's diet
-1 large glass coconut water (post workout)
-Chocolate coconut smoothie (1/2 can coconut milk, 1 scoop of unflavoured/unsweeted whey, 1 tbsp cocoa powder, 1 tbsp coconut oil, 1 tbsp maple syrup)
-green salad with (lemon and EVOO), balsalmic-glazed chicken drumsticks
-beef stir fry (beef, assorted bell peppers, onions, mushrooms, garlic) sauteed in CO/butter
-4 oz of milk
Today's workout
HIIT - warm/up, 6 x 15 second sprints, cool/down
I am not diabetic, nor have I ever been diagnosed pre-diabetic, but I did do my blood-sugar, after dinner, just to be certain. It is 6.7 mmol/L or 120 mg/dL, which post-meal is normal.
So has anyone else experienced this? Should I be concerned? Thanks.

I always find I'm thirsty as hell if I don't get enough salt.
That's possible. I've never much been in the habit of salting my food, although I am getting better.

I agree. That dry, non quenchable thirst usually is from an imbalance of sodium.

Sipping a glass of lemon and salt right now. It seems to be helping. So note to future self, do not be afraid or forget to salt your food.

Yeah, I went from NEVER salting my food to salting everything but bacon.

Is there a salt that is best? Is regular table salt okay, or is sea salt or himalayan pink salt better to use?
I used to have to throw containers of salt away because they'd harden before I used them up. Once I stopped eating processed foods (the biggest salt offender was Progresso soups), I got back in the habit of salting at least veggies, broth, etc. Bone broth + nori/seaweed + salt = healthy yummy delicious goodness.
