Does anybody have any experience with Chia seeds?
I eat them all the time. I add them to water, and it thickens up. The consistency is sort of like watered-down tapioca. Then I drink it. Some people think it's gross, but I don't mind it.
I soak them in water in my blender, and use in smoothies that I don't want to thicken with dairy.
When I was vegan, it was my favorite egg substitute in baking. I don't use them anymore, but if I did, I would just blend them in smoothies or make "pudding" out of them.

Weight does NOT equal health -- ditch the scale, don't be a slave to it!
I use them instead of flax when I make food I want to share with a friend that's allergic to flax. They work similarly when baking.
To each his/her own.
That said, ewwwwwwww!
