I soak them in water in my blender, and use in smoothies that I don't want to thicken with dairy.
When I was vegan, it was my favorite egg substitute in baking. I don't use them anymore, but if I did, I would just blend them in smoothies or make "pudding" out of them.

I use them instead of flax when I make food I want to share with a friend that's allergic to flax. They work similarly when baking.
