I've done this a few times and it is pretty darned good. I've never done it with coconut in it (other than the oil); but, I've made it with chopped nuts mixed in. It ended up kind of like chocolate bark.
Gonna try out this recipe, sounds easy.

My personal fav is:
-4 TBS Coconut Oil
-4 TBS Cream from can of coconut milk
-1 TBS Raw honey
-Hand full of roasted walnuts.
Melt together over double boiler, pour into mold (I use a tupperwear dish), and refrigerate. I comes out kind of like a light fluffy fudge, very tasty.
Uhm, Sambo, how much chocolate powder do you add to the liquids?

Oh yea, guess I forgot the most important part! Whoops.
I use 1-2 TBS depending on how chocolatey I'm feeling. I've also tried using one square of bakers unsweetened chocolate and it worked just fine as well.
