I will give these a shot. I bought 6 pounds of coconut flour 2 years ago and I'm finally down to my last pound - you can see the frequency with which I use it. It would be nice to eliminate it altogether. Funny, I just purchased 4 lbs on Tuesday to restock...for the next 2 years. Ha.

I made these this morning using a frozen banana from my paleo smoothie stash, plus two eggs in a blender. Cooked in butter. They were thin but very pancake like, and sweet enough that I only put some additional butter on to eat them. Awesome! And so filling! Hard to believe it's only 2 eggs and a banana - feels like a feast!
They sound fantastic! I am trying them out for breakfast tomorrow! I've seen a recipe that was similar to this, but they added garlic and other spices to make it a "dinner food." Any thoughts?

I didn't have any success with these... I ended up just scrambling them because they were so runny!
I found that you really can't touch them in the pan until they have set quite firmly. Then flip quickly. One of my pancakes that had a banana "chunk" in the middle fell in half on me, but the others were easy to flip once they had set.
We make the plantain pancakes (from the Paleo mom blog) at least once a week. All the kids love them.
