What to cook?
I have: eggs, eggplant, butter, coconut oil, coconut milk, an orange, flaked almonds, salsa, broccoli, green pepper, spaghetti squash, curry powder, red onion, garlic, and lentils
any ideas? (doesn't have to use all ingredients!!)

Baked capsicum with curried garlic, onion and lentil filling.
Coconut-orange roasted squash with flaked almond toppings.

You can't really go wrong when you start with such great ingredients.
I'm lazy. Bake up the spaghetti squash. "Stir fry" it in some butter. Turn down the heat. Scramble some egg yolks. Pour the egg yolk mix over the spaghetti squash and heat through until right before the eggs set up.

Who says back fat is a bad thing? Maybe on a hairy guy at the beach, but not on a crab.
