how about hungarian goulash. serve with parsnip or cauliflower instead of the noodles. or you could try noodle out some parsnips in loads of butter to simulate the "butter noodles".
I bought some buffalo stew meat at the market today, but I don't really want to make stew out of it, since I feel that I NEED bread with things like that... What are my other alternatives? Is stew meat too tough to make shish kabobs out of? Should I marinate it? And does it cook the same as beef does? I'm a little lost, but it just looked so tasty!

I imagine you could do it with beef. However if the beef you got does not have a lot of fat on it you may need to add some in.
You could also make.. stew, with your stew meat: like this, only omit the flour: Slow Cooker Pork and Green Chile Stew | Skinnytaste
Just slow-cook it, and serve it with steamed/baked/boiled vegetables.
We don't make casseroles anymore now that we have a slowcooker.
