    Should I avoid cheese with Annatto in it? Also applegate farms products?

    I can usually get pretty good locally made cheese for cheap around here but they add annatto to their cheddar. Just wondering if its something to be avoided?

    also I purchased a few boxes of applegate farms chicken and sage breakfast sausage on sale the other day. this stuff: Products - Breakfast Sausage - Gluten Free Natural Chicken and Sage Breakfast Sausage - Applegate

    havent tried it yet and was curious about others opinions on it.

    Applegate is the one meat brand I do buy, aside from meat at the butcher counter or from a farmer. Seems like they do the right stuff. Would love to know if others know any more about them...

    I don't think there is anything wrong with annatto. I'm not sure how it's processed before it's added to cheeses, but annatto itself is just a seed. I've used it in cooking a few times.

    i always thought to make it into a dye or whatever it had to go through some crazy chemical processing? maybe im wrong?

    I eat applegate farms shit all the time though.

    Nope... to use annatto seed as a dye all you have to do is steep it in a liquid, such as a fat for a few minutes.
    BOOM!
    Color.

    You can actually buy just annatto seed yourself and do this very easily.

    Yeah, anatto is just a bright orange seed. My grandma cooks traditional Puerto Rican dishes using anatto oil -- basically putting the seeds in some olive oil and letting it sit for a few hours. The oil turns BRIGHT orange from the natural dyes in the anatto seeds.

    No chemical process necessary!
