    Challenge! Stuffed peppers that are meat, grain, and dairy free & low carb.

    Primal Fuel
    Looking to stuff these bell peppers I have.

    dont want rice, meat, or cheese and preferably low carb.

    Make a stuffing of pecans, spinach, summer squash, and cranberries with butter? If you make it mostly spinach, it'll be fairly low carb.

    Maybe ground beef, or beef mixed with another ground meat of your choice and some vegetables. Riced cauliflower?

    dont want dairy or meat. but might sub the butter for coconut milk. that might work make it sort of a creamed spinach filling.

    Ah, didn't know how far you were going with no dairy. Use olive oil or coconut milk, then.

    you could make a tomato sauce of some kind. ratatouille like almost. fill the pepper and crack an egg on top and cook.
