    Can you pan fry soaked lentils?

    So traditionally it seems you boil lentils or at least cook them with a little water. Before cooking I leave lentils overnight in warm water since it removes any of the phytates and such. I tried pan frying a handful and they become crispy pretty quickly and were very nice. However is this a correct way to cook them, i.e. is it safe?

    Hmmmm I'm not sure about that. My guess would be to boil first and then fry. Or even boil, blend into a paste and make crab cake type things.
