Not my favourite cut of beef by any stretch.
Has anyone any recipes for a housekeepers cut that will keep it moist and not tuff?

I am thinking along the lines of this:

1 tablesp. oil
2 kg joint of beef
4 small whole onions or shallots, peeled
Selection of chopped vegetables
2 heads of garlic
Bunch of fresh herbs
250 ml liquid i.e. stock, water,
Salt and pepper
