I worked in 4 different restaurants back in the day. Every single one of them used vegetable oil to fry food in.

Where is this restaurant you speak of?

I just did a google search for restaurants that cook with lard in Nashville. (It's close to where I live.) The only result was a fried chicken place.

My perfect restaurant would cook with coconut oil and butter... Only in my dreams.

It's probably a local chain, but Roberto's/Don Tortaco's here in Vegas is where I saw the lard sign. I've only seen it at one of the restaurants (Hacienda and Decatur, for locals), so I'm not even sure if all of them do and the others don't mention it, or if it's just that one.

I once found a tamale vendor that had a choice of "traditional" (lard) or "Healthy" (crisco?) tamales.

Sure, try and guess which one I asked for.

Most Indian places use ghee. My local one does and I LOVE that place. I always go there or to a sushi place on special occasions. You just have to dodge the rice and naan!

I have some friends who were both morbidly obese. First she got gastric bypass surgery, and then he did. They've had a delicate time healing, and she ended up needing her gall bladder removed a little while after the surgery. Finally, their situation seems to be stabilizing.

And what do I see but a post in which they ask their family and friends to vote for them to win dozens of free cupcakes from a local artisan cupcake bakery.

    -sigh-

Maybe they're cupcakes made of meat? Or at least made with butter?

Even sadder is someone else's post on the same cupcake-contest site, begging for votes because she needs the cupcakes to get her "blood level" up (I think she means iron?) so she can get knee surgery and get off her medications. (??)

    JUST EAT SOME STEAK, PEOPLE!

    *goes into a corner, cries*

Ritarose, spent three weeks earlier this year in Vegas, never hit a casino, but carnitas and lingua tacos from Los Tacos on Charleston were a hit for me. EllaEm's liver an onions worked too. Rendered Duck fat from the Butcher Block made cooking in the Hotel a treat.
Lots of options compared to living on an island!

Okay for the funny... the lady behind me in the check out mentioning, she gets tongue for a doggie treat too.

I was informed yesterday that I need to snack all day. Lots of little meals. That way, I would have energy all day.

OK. I replied that I did better eating 3 huge meals a day and told them what my breakfast is- 3 eggs, scrambled with bacon and a bunch of veggies, coffee with cream. You'd have thought I said I eat an elephant. The look of disgust was hilarious.....but ummm, this is why I don't need a 500 calorie muffin at 9:30 anymore and a 500 calorie cupcake at 3:00 anymore. But yeah, looking forward to seeing 100 Calorie packs around the office again.
