Whole pigs and cows page

Ok, so my father-in-law always raises a pig for us and we are going to be getting it soon! So excited, this is our second one and it is all so good! But I want to ask for all the "guts". Except I don't know what I specifically want and want to tell him..., obviously I want the liver but what else do I want? Oh, and I am asking for bones too... For yummy bone broth! Which I made my first batch of, that will be finished today! I am also waiting to get a cow.... Grassfed meats are sooo expensive around here! So I am buying a whole cow to cut back on price. But I won't get that until spring

That's exciting! I can't order whole animals because I live alone and I live in NY City---def no large freezer for bulk meets here! lol

I get a bag of lard with mine. With large enough pieces I make "lardo" and render the rest. Lots of on line instructions.

Lets see I ended up asking for the brain, heart, liver and kidney and bones for bone broth... I was basically told I could get the organs but prob not the bones...
