On hand I have a whole sheep leg. It's big.

The problem is, the whole thing is frozen in one piece. To defrost, I'd have to defrost the entire leg of course...and then I'd have to race to eat all of it since it's not good to re-freeze anything after being defrosted.

So you see, I'm going to have too much defrosted meat on my hands. I wouldn't be able to consume all of it before some of it starts going bad. I assume once defrosted, the meat will be good for 3-4 days.

Any ideas?
