"Insane amount of vegetables" is a relative term. If you're consuming so much roughage that it's messing with your gut, then that is insane. If you feel fine, then you're probably fine.
Also, you only listed the gnarliest gas-inducing vegetables. What about starchy tubers and root vegetables, the squash family, nightshades, etc?
