I make turkey chili but decided to add some sausage to it. I got the pork sausage from whole foods, they weren't cheap. As I was cutting them up I found inside what to me seemed like blood vessels in them, it was really nasty. Is this is normal? To say the least I am officially done with pork now.

But surely you knew that pigs have blood vessels inside them. (For that matter, so do turkeys. Watch out!)
I don't understand your point and question. If the blood vessels gross you out, don't eat the sausage. Simple as that.
