I'd recommend coconut flour.
You could use almond flour as well, but I wouldn't cook that at a very high temp for too long due to the O-6 content.
I am on day 10 of paleo and trying to develop food plans. I have a chicken piccata recipe that I particularly love and it is totally paleo EXCEPT that it requires breading the chicken with flour before pan frying it. The breading mostly serves to thicken the sauce. Any ideas as to what I can use instead to "bread" the chicken and/or thicken the sauce?

Arrowroot, tapioca, potato, white rice, etc. flour are all fine wheat alternatives.
