Core 'em with an apple corer, stuff their centres with garlic and roast 'em!
Boiled, cooled and marinated in vinegar, or even pickled ... or, pickled with beetroot so they change colour. Serve cold with a salad, salmon, mackerel or herrings, and lots of dill.
I mash mine or make fries out of them. So delicious!
