OMG I totally forgot that I bought 5 avocados specifically for this challenge (I'll buy more... just wanted to get through the week).
I got 3 that were very dark in color (scraping the stem area with my fingernail produced an awesome avocado green so they must be ready) and two that were green in color so they don't go bad on me before I get to them.
I thought about making some egg salad (have about a cup of homemade mayo in the fridge) and eating them with that. I tried avocado once (and guacamole) and wasn't too impressed b/c there wasn't much flavor there - and the creamy texture was a bit off for me, but I really want to give them a chance b/c I know they're a "superfood" (according to Subway). Tell me, how do you use them?
