Mmm, one of my favorite lunches has Costco in its bones:

Salmon patty (all salmon, but pressed into a round patty) fried in a pan, five minutes each side, then topped with artichoke mayo(marinated artichokes ground in the food processor then mixed with a spoonful of mayo).

A bag of patties, a huge jar of artichokes, and I have 12 lunches for less than $20. Can't wait for my next Costco run!

Great idea. I just got a box of the patties, but haven't tried them yet. I'm going to make a big batch of artichoke mayo and try it out.
