I've never done the whole 30, but my feeling is that pancakes aren't really worth missing. Plenty of things can be made delicious with butter, onions, garlic, mustard, wine, herbs, rooster sauce, salsa or simply choosing an optimal cooking process. I realize that salsa might not be on the whole 30 plan, but you can make a tasty salsa from mango, onion and cilantro and even add avocado. Anyway, creativity helps, but in my opinion, creativity has to be simple or else too much complexity is the reason I go running for processed food. I don't like complicated cooking.
