The local Whole Foods carries husked (if that is the right term) coconut - the shell has been removed. It isn't that expensive and I've been tempted to buy one - but I don't know what to do with it. I do love coconut but this is a little intimidating. Part of me is a little concerned that my hands might not be strong enough to cut into it - I've some arthritic hand issues. Is this a valid concern?
What would YOU do with this coconut? I need ideas I don't know how "fresh" it really is since the shell has been removed...
