Happiness: Seeing a beautiful array of vibrant, colorful vegetables on my plate and knowing they are going to taste even better than they look.
Breakfast: 2 pastured eggs cooked in spiced tomato sauce with fire roasted bell peppers and onions
Lunch: Mixed green salad with sliced pears, green onions, pastured chicken, and a homemade balsamic vinaigrette
Dinner: (to be made) Butternut squash, sweet potatoes, asparagus, spinach, and bok choy sauteed in butter and spices. Served with skin on wild-caught salmon.
