    anyone out there have a nut-free cookie recipe?

    i'm dwindling off of the nut-based and seed-based baked goods. they are tough on my tummy, and inflammatory.
    i'm getting a little more into coconut flour, and the starchy (and easy for me to digest) tapioca flour.
    does anyone out there have any cookie recipes they would like to share with me? i would love to do a post on a successful recipe on my blog.

    I make these a lot(i forgot where i originally got the recipe so i cant credit them but bravo to whoever)

    3 tbsp coco flour
    2 tbsp butter
    1 tbsp honey

    mix all together drop by balls onto baking sheet and flatten out bake 365 until the edges brown. kind of like shortbread cookies and they are fantastic. i usually dont divide it up and just make one giant cookie
    really hits the spot if you make 2 big ones then make a sandwich with them filled with coconut whipped cream.

    I'm going to experiment with my chocolate chip cookie recipe that uses both coconut flour and almond flour. My youngest is allergic to nuts, so I want to see if I can invent a good recipe for her. If it works, I'll post back here!

    Almonds ARE nuts... almond flour = ground almonds.

    Yes, that's why I'm going to experiment with the recipe... see how much coconut flour and how many extra eggs it will need to remove all the almond flour!

    Trish, does it taste anything like pumpkin? I like pumpkin as a squash, but IMO it should NEVER be combined with any sweetener. Pumpkin pie, pumpkin "bread", pumpkin cookies are all "yuck" to me if I can taste the pumpkin.

    So I read this, got up from finishing some work, walked into the kitchen and made one of these cookies. Results: pretty tasty, but a little dry (likely my fault; I don't really measure things). I think with a little more honey than what I put in, and maybe an egg, it would be pretty delicious. Will definitely play around with more of this.

    Oh! I also added a touch of cinnamon. I bet it'd be easy to add some chocolate or something also. The whole process took me like 1 minute to mix and maybe 8 for cooking.

    It's been a year since I made them (so I can't remember). What you speak is sacrilege. I LOVE pumpkin chocolate chip cookies! LOL. Not a big fan of pumpkin pie though.

    Ha! No worries; I'll send the recipe off to daughter and have her make it, then report back if it tastes like pumpkin!
