I was given the job of bringing an appetizer/finger food for thanksgiving. I am thinking of making mini skewers on toothpicks, several different kinds. My ideas so far are:
Smoked salmon, avocado, cream cheese
bacon, cheese, maybe avocado or salmon
cooked chicken, tomato, Mexican seasonings
cooked chicken, fresh basil, tomato
I'm not sure how many types I will make. Does anyone have any other good ideas? I'm looking for something relatively easy, but I do know how to cook. This is for my family, so they won't want anything "weird" (bone marrow, organs, etc.) They could be served hot or cold.
prosciutto wrapped asparagus
feta/tomato/kalamata olive skewer
bacon wrapped scallops
Your smoked salmon, avocado, cream cheese is one of my faves, except I wrap it in nori, chill it, then cut it like sushi. Tres elegant! Soft goat cheese elevates it one more step.
Pears or apples or melon wrapped in prosciutto are yummy. Or stacked on a skewer with cheese.
This one is messy: Fresh mozz (if you can find the little balls, it's easier) and cherry tomato. Serve them resting in a shallow bowl of garlicky olive oil.
Hot or sweet cherry peppers stuffed with sausage and mozzarella.
