8 liquid oz fresh hot espresso
4 liquid oz cold espresso (from the fridge)
5 ice cubes
1 tablespoon liquid coconut oil
sweetener of choice - I used liquid stevia drops
Add the hot espresso and the liquid coconut oil to the blender and blend until frothy.
Stop the blender and add the ice cubes. Blend some more and while you're doing so, add the chilled espresso, and blend until the ice cubes no longer make noise.
For your first serving, you'll probably need to put a couple of ice cubes in the glass, but the dilution factor will be less because you used espresso instead of regular coffee. I put the blender in the freezer while I drank the first glass, so my second glass didn't need any additional ice.
The coconut oil didn't clump up as the drink cooled.
If the dilution from the ice bugs you, a trick my old granny taught me was to keep an ice cube tray of frozen coffee around during summer so that when your ice melts, it won't turn the coffee watery.

-Five tablespoons coconut oil
-Five tablespoons cocoa powder
-Pinch of salt
-Honey (to taste)
Melt coconut oil and mix with cocoa powder, salt and honey until fully coloured, then line in a tray with baking paper and freeze for fifteen minutes. Then take a knife and cut the "squares" or servings before freezing for another 15 minutes. Remove from freezer, break squares/servings apart and chill in the refrigerator until ready to serve.
That vaguely reminds me of something I threw together on Saturday when I was craving chocolate:
- 4 spoonfuls of coconut oil (melted)
- 2 heaping-ish spoonfuls of unsweetened cocoa powder
- 1 spoonful of Truvia
- 2 frozen black cherries.
Combine everything but the cherries in a small bowl (only downside is that the truvia won’t really dissolve–I suppose you could heat it, but I was too lazy).
Chop up the still-frozen cherries into small pieces. By then, they will have warmed to the point where they’ll basically just be very cold, no longer frozen. Stir chopped cherries into the chocolate mixture, which will solidify and coat them.
Eat with a spoon and enjoy. End result is kind of like a crumbled fruity chocolate bar.

Cook peeled, cut up carrots in microwave with a little water.
While the carrots are cooking, sauté onions and garlic in coconut oil until they're tender. When the carrots are done (soft), dump them + the carrot water into the pan with the onions and garlic. Mash the carrots with a hand masher or immersion blender. Salt and pepper to taste.

That is a nice recipe..gonna have to try that..i have a question though..what happens if i add honey as a sweetener..would it still taste that good or better or worse..so just let me know..
Hmmm.... I have a recipe for sweet potato pie... I wonder how carrot pie would taste...
