Butter, fatty skin from any birds I get that aren't 100% grain-fed, fat from red meats and, of course, olive oil and fish oil to help when feeling ill or suffering a dehydration-headache (I come from a hot country and live in the UK, so I'm very used to only drinking when I feel warm, which worked there, but obviously doesn't here!).
All good. My fav is NZ lamb or chicken fat, roasted or fried in butter until crispy... Mmm! Lamb-cracking is MUCH better than pork crackling and pork crackling is amazing, so get yourself some lamb fat! ;p
