can you face legumes for a meat free but bean filled chilli?
So tomorrow night I'm making dinner for a vegetarian friend of mine and obviously want it to be paleo without the meat, then perhaps only have the meat on my plate at the end.
So what can I make for her? Did a Thai curry the last time I was there so wanted to do something different. Thoughts and inspiration very much welcome
Thanks![]()

omelet or frittada filled with in-season veggies/fruits with roasted veggies on the side
Not really as not eating legumes.
Omelette sounds good but not really a ''make a nice dinner' meal is it?
Hmmmmm keep em coming![]()
Stir fry
Ratatouille and you could start with a greek salad
Eating primal is not a diet, it is a way of life.
PS
Don't forget to play!
Vegetarian lasagne with eggplant instead of noodles? I've never made it (don't like eggplant) but it's a "make a nice dinner" type! Have a salad with primal Italian dressing, olives, feta cheese crumbles, tomatoes, etc.

I was going to suggest chili, too, but then you said no beans.
roast root vegetables from Everyday Paleo
Roasted Root Veggies « Paleo por Vida!
if you toss scrambled eggs in there when they're done, it's quite nice.
I just keep hearing Maria Portokalos in my head saying "He don't eat no meat? Oh. Oh, that's okay. I make LAMB!"

Another thought: does your veggie friend eat fish? There are all kinds of fish possibilities.
