    Help: making dinner for a veggie tomorrow!

    Primal Fuel
    So tomorrow night I'm making dinner for a vegetarian friend of mine and obviously want it to be paleo without the meat, then perhaps only have the meat on my plate at the end.

    So what can I make for her? Did a Thai curry the last time I was there so wanted to do something different. Thoughts and inspiration very much welcome

    can you face legumes for a meat free but bean filled chilli?

    omelet or frittada filled with in-season veggies/fruits with roasted veggies on the side

    Not really as not eating legumes.

    Omelette sounds good but not really a ''make a nice dinner' meal is it?

    Vegetarian lasagne with eggplant instead of noodles? I've never made it (don't like eggplant) but it's a "make a nice dinner" type! Have a salad with primal Italian dressing, olives, feta cheese crumbles, tomatoes, etc.

    Roasted Root Veggies Paleo por Vida!

    if you toss scrambled eggs in there when they're done, it's quite nice.

    Another thought: does your veggie friend eat fish? There are all kinds of fish possibilities.
