Heh, our pork farmer I guess designated us as the 'whole animal' customers since we don't shy away from pork fat, liver and tongue & asked for pork belly uncured (OMG, we finally got it that way, 3rd try!), so we discovered pork kidneys and spleen from our pig.
So, anyone know any eadible recipes with these offal pieces?
