I posted this last week in answer to another breakfast question, but it still holds - fritatta (or egg muffins!). Make ahead, freeze or keep in fridge at home. Take portions to work and reheat in microwave.
Hi everyone,
As a newbie to starting primal, one of the biggest things i'm worried about is what to eat for breakfast, especially as I eat at work usually? Obviously weekends I can make omelettes and stuff but what do the rest of you that eat at work do? there is only a toaster and microwave here.
Lunch will be a similar thing, i'll have to pre-cook stuff to bring in to re heat at lunch.
Thanks again![]()

Sorry - I'm using what you're using, but I'm not sick of it yet! (OK, sometimes I use shredded greens rather than peppers and sometimes a little goat's cheese, rather than bacon etc.)
I know there are lots of variations if you google.
well, this probably won't help if you're sick of eggs + veg + pancetta, but...
quiche cups:
take a muffin pan, put half slices of prosciutto or (large) salami slices in each cup as a base - feel free to use any kind of cured/smoked/whatever meat that suits your taste - you may want to grease your tin as well.
(optional depending on if you do dairy) - crumble some cheese at the bottom of the cups - I used a welsh cheddar w/chives.
beat some eggs with veg of your choice - yesterday, I used kale and leftover canned diced tomatoes - 'cause it's what I had in the fridge... add seasonings if you like (I added cayenne pepper and fresh garlic), then evenly distribute the egg/veg mixture amongst the cups.
Bake at 350 (or your favorite temp) until the eggs are set to your liking - if you have any cups in the muffin tin that aren't filled with food, put a bit of water in each one - I'm told it encourages even baking.
You can also do this without beating the eggs (just put veg in each cup, then crack an egg into the cup, makes a nice sunny side up baked egg) - if the size of your cups and your eggs matches up (mine usually don't)
other grab and go ideas:
coconut milk +fruit (frozen berries, half a banana, etc.) +ice in the blender + to go cup.
bulletproof coffee
hardboiled eggs + pre-cooked bacon or sausage + fruit (maybe yogurt too?)
turkey drumstick? (I'm sure I have more, but they're escaping me right now)
4-5 raw carrots
can of sardines
peanut butter as wanted
ad astra per aspera
a can of tuna with paleo mayonaise and salad.
avocados with smoked salmon and salad
scotch eggs
cold anything like curry or soup or stew heated up
liver pate with primal crackers or vege sticks.
some kind of paleo/primal energy bar ( home made lara bars )
cold meatza. i think someone posted a link to a rolled up version recently?
paleo sushi
smoked fish and hard boiled eggs.
i forgot paleo mug cakes!
I cycle in to work so have breakfast after showering. Try Coconut muesli. If you want a warm breakfast on cold days add some quinoa soaked in water overnight.Only takes a couple of mins in the Micro wave.
