Is coconut milk (canned or tetra pack) supposed to have the consistency of melted ice cream after its been refrigerated (even after i stir it).. Sometimes its almost like soft serve ice cream.

Depends on fat content...but yes. I throw my in a blender then put in the fridge and its just like whipped cream.

The thicker it is the fattier it is and less water it contains.

We make our own coconut milk and a bit more water to thin it out, but that's our personal preference.

Yes. The cold congeals the fat and makes it thicker. It's fine.
