I'll be up front. The very basic idea of this, I stole from a fast food Italian joint around here. Then I made it primal and added pepperoni and veggies. I'd say this is a great kid food, if you leave out the extra veg.
1 spaghetti squash
3 c spag sauce, cold (mine was homemade and already mixed with the sausage)
1/2 lb Italian sausage
1 zucchini, chopped fine
1 carrot, chopped fine
1 celery, chopped fine
1 bell pepper
1 roma tomato
2 c mozz or Italian mix shredded cheese
2 oz pepperoni, or to taste
Saute the sausage until cooked through, making sure to break it apart, allow to cool. Nuke the squash until it can be scraped free. Mix the spaghetti squash noodles and veggies together in a casserole dish. Top with the sauce and sausage and use a fork to mix it evenly with the veggies and "noodles." Top with cheese and pile on the pepperoni. Bake at 350 for 30- 45 min, or until cheese is bubbly and browned in places. Wait 5-10 min to serve.

You can also make it in layers of squash, cheese and everything else to produce a lasagne.

I've done the lasagna, but I was craving baked spaghetti like nobody's business. The spag squash also holds up better and doesn't make it watery.

I've made baked "spaghetti" using cabbage. I have 2 sisters that hate cabbage. When they asked what the dish was I simply said low carb baked spaghetti. They loved it and could not tell it had cabbage. They were shocked when I told them what the spaghetti really was.
You honestly don't taste the spaghetti squash. It's a carrier, much like the original pasta. You do get the texture, but none of the taste.
