This recipe right here (which I've seen on a number of paleo sites) is a good one. I half the recipe and use mixed berries (.13 lb for the half recipe) and I add in a half-pinch or so of salt. Don't forget to use unfiltered honey (it will make the end result creamier anyway), and heat the coconut milk so that it separates (it's a good idea to use this kind, as I find that adding the coconut milk warm allows the dessert to blend better).
The time it takes to firm up in the freezer is about 45-50 mins (I stir halfway), but it really depends on how firm you like yours. Make sure to chill the dish in which you'll serve it (I use glass cups) so that the sorbet doesn't melt on contact.
Anyways, that's my dessert of choice.
Edit: Oh, and as for snacks: Kippers work very well. I split a tin for lunch with my mother when our lunches don't have any other meat (I live in a state of profound broketitude, as Alton Brown would put it).
Tonight my dessert was fresh homemade goat cheese with a little tart cherry juice concentrate. If you do dairy and have a source of good milk (organic and not ultrapasturized), homemade soft cheese is remarkably easy and will impress people.
