First I baked the sweet potatoes int the oven which helps concentrate their flavor...
Then cooled, peeled, and sliced them about, 1/4 - 3/8 inch
Layed them out on a lined baking sheet, brushed both sides with EVCO... and re-baked at 450 until bubbling and getting just crips at the edges. Maybe turned the broiler on to hit the tops with some color... watch closely.(I have no idea how long.)
They were addictively delicious. Very sweet, slightly coconutty... the double baking concentrated the sugars.
