    Anyone ever make french or sweet potato fries in coconut oil?

    Not actual 'fries' ... but I have done sort of twice baked sweet potato slices brushed in coconut oil and they were absolutely divine!

    First I baked the sweet potatoes int the oven which helps concentrate their flavor...
    Then cooled, peeled, and sliced them about, 1/4 - 3/8 inch
    Layed them out on a lined baking sheet, brushed both sides with EVCO... and re-baked at 450 until bubbling and getting just crips at the edges. Maybe turned the broiler on to hit the tops with some color... watch closely.(I have no idea how long.)

    They were addictively delicious. Very sweet, slightly coconutty... the double baking concentrated the sugars.

    I usually cook mine in lard or bacon drippings then toss with garlic powder if I'm eating them savory. Otherwise bake them whole and eat with butter and cinnamon. I would imagine they'd be fine with CO, though.

    I do it turns just fine. But with sweet potatoes, I prefer mix of sesame oil, ginger juice and soy sauce.

    Nom! Its super comfort food, I twice bake them to up the crispyness. I cook them in melted lard and paprika and S&P. The bf also throws on a load of cinnamon when they're done too.
