I saw this on Dinners, Drive-ins, and Dives....
A Jamaican lady made this..... She cut up small cubes of ginger and coconut.... like 3/4" cubes. She put them in a hot pan, and placed brown sugar and water over them. She let is get nice and gooey, then scooped it out and placed it on a cookie sheet that was covered in parchment paper.... Then she put it in the oven. When it came out, she let it cool, and she broke it like brittle.....
Now, I could see MAYBE honey, or MAYBE grade B maple syrup.....
I am thinking that a 1" square might be a nice treat once in a great while.

Coconut sugar? That's all I can think of.
I've had good luck using blonde coconut palm sugar in place of brown sugar in recipes. I've even made a caramel sauce for ice cream with it following a standard recipe. It's not as sweet as brown sugar and low glycemic, plus it includes some nutrients. Not an every day item, but would probably serve as a good stand in for your recipe.
